Ingredients

  • boneless chicken breast600 g, 4 pieces
  • paneer, grated100 g
  • cashews, chopped2 tbsp
  • ginger garlic paste1 tbsp
  • garam masala1 tsp
  • thick yogurt2 tbsp
  • ghee1 tbsp

Method

  1. Make the stuffing

Mix the grated paneer, chopped cashews and half the garam masala in a bowl. Keep the filling on the drier side so it stays packed inside the chicken and does not leak out and steam the meat as it cooks.

  2. Stuff the chicken

Cut a deep pocket into the side of each breast without slicing right through. Pack in the paneer stuffing and pin the opening shut with a toothpick so the filling stays sealed in while it cooks.

  3. Marinate

Rub the stuffed breasts all over with the yogurt, ginger garlic paste and the rest of the garam masala. Cover and chill for 1 hour, the yogurt tenderises the meat and helps it brown into a deep colour.

  4. Air fry

Wrap each breast loosely in foil and set it in the basket. Air fry at 180°C for 18 min, then unwrap and air fry for another 7 min so the outside turns golden. It is done when the centre shows no pink inside and the juices run clear.
