Ingredients
- fish400 g fillets
- mustard1 tbsp
- lemon1
- green chilli2
- egg1
- breadcrumbs1 cup
Method
Cut the fillets
Cut the bhetki into long, flat fillets of even thickness and pat them very dry with a kitchen towel. Dry fish grips the coating far better, so wiping off the surface water now gives a crisp crust instead of a soggy one.
Marinate
Rub the fillets with mustard paste, lemon juice, chopped green chilli and salt, then rest them for 15 minutes. The lemon and salt season the fish right through and firm up the flesh so it does not break while cooking.
Coat
Dip each fillet in beaten egg, letting the extra drip off, then press it into the breadcrumbs on both sides for a full, even coat. Firm pressure locks the crumbs on so they do not flake away in the basket.
Spray
Mist both sides of every fillet with a little oil. That thin film is what turns the dry crumbs deep golden and crisp, standing in for the oil a deep fryer would add to the pan.
Air fry
Air fry at 190°C for 12 min, turning once halfway, until the crust is golden and crisp. The fish is ready when it turns opaque and flakes easily with a fork at the thickest part.
