Ingredients
- Pita bread3 rounds
- Olive oil2 tbsp
- Dried thyme and sesame1 tsp each
- Sumac or amchur1/2 tsp
- Sea salt1/2 tsp
- Smoked paprika1/2 tsp
Method
Cut into triangles
Stack the pita rounds and cut them into bite-sized triangles, then peel apart any double-layered pieces. Making them a similar size helps every chip crisp at the same rate.
Toss with oil
Drizzle the olive oil over the triangles and toss until each piece wears a thin, even sheen. That even coat is what gives the chips a uniform golden crackle instead of dry, pale patches.
Season generously
Sprinkle over the thyme, sesame, sumac, paprika and salt and toss again so the spices stick all over. If sumac is hard to find, a little amchur brings the same bright tang.
Air-fry till crisp
Spread the triangles in a single layer and air-fry at 180°C for 6 min, shaking once, until golden and crisp. They firm up more as they cool, so pull them before they darken too far.
