Ingredients

  • Day-old idlis, cubed6 idlis
  • Idli podi (gunpowder)3 tbsp
  • Sesame oil2 tbsp
  • Mustard seeds1 tsp
  • Curry leaves10 leaves

Method

  1. Cube the idlis

Cut firm, day-old idlis into bite-sized cubes. Fresh, warm idlis are too soft and will crumble, while slightly stale ones hold their shape and crisp up far better in the dry heat of the air fryer.

  2. Make the podi oil

Warm the sesame oil gently and stir in the idli podi to make a loose, fragrant paste. Warming the oil first wakes up the spices in the gunpowder and helps the paste coat each cube evenly rather than sitting in dry clumps.

  3. Coat the cubes

Gently toss the idli cubes in the podi oil with the mustard seeds and torn curry leaves. Coat every face evenly so each cube turns spicy and golden, and toss lightly so the soft idli does not break apart.

  4. Preheat the basket

Preheat the air fryer to 190°C for 3 minutes so the cubes start searing the moment they go in. A hot start firms the outside quickly and gives you a crisper shell around the soft centre.

  5. Air-fry until crisp

Spread the cubes in a single layer and air fry at 190°C for 12 min, shaking the basket twice for even browning. The single layer lets the hot air crisp every side. Serve straight away while hot and crunchy.
