Ingredients
- paneer250 g
- yogurt3 tbsp
- tikka masala paste2 tbsp
- tortillas4 pieces
- capsicum1 medium
- onion1 medium
- mint chutney2 tbsp
Method
Marinate the paneer
Cut the paneer into cubes and coat them with the yogurt and tikka masala paste, then rest for 15 minutes. The yogurt tenderises the paneer and helps the masala stick and soak past the surface.
Air fry the tikka
Spread the marinated paneer, capsicum and onion in the basket and air fry at 190°C for 10 minutes, shaking once, until the edges are lightly charred. Shaking turns the pieces so all sides colour.
Warm the tortillas
Lay the tortillas in the basket and air fry at 180°C for 2 minutes until soft and warm. Warming makes them supple and easy to fold, so they wrap around the filling without splitting at the crease.
Assemble the wraps
Spread mint chutney over each warm tortilla, add the air-fried paneer tikka and vegetables in a line, then roll tightly. Keep the filling to the centre so the wrap seals and nothing slips out of the ends.
Final crisp
Set the wraps seam-side down in the basket and air fry at 180°C for 3 min until the outside is lightly crisp and golden. Seam-side down first seals the join with heat so the wrap stays rolled.
