Ingredients
- paneer250 g
- yogurt3 tbsp
- capsicum1 medium
- ginger garlic paste1 tsp
- red chilli powder1 tsp
- oil1 tbsp
Method
Cut
Cut the paneer into even cubes and the capsicum into similar-sized pieces. Matching sizes means everything cooks in the same time, so the paneer chars just as the capsicum turns tender.
Marinate
Mix the yogurt, ginger garlic paste, chilli powder and oil, then coat the paneer and capsicum and rest for 15 minutes. The yogurt clings to the paneer and helps the spices colour and grip the surface.
Arrange
Lay the pieces in a single layer in the basket so they roast rather than steam. Leave small gaps between them, as crowding traps moisture and stops the edges catching that lovely char.
Air fry
Air fry at 190°C for 12 min, turning once halfway, until the edges are charred and the paneer is golden. Do not leave it longer than needed, as paneer held too long in dry heat can turn firm and rubbery.
