Ingredients
- kale4 cups torn
- olive oil2 tsp
- salt1/4 tsp
- garlic powder1/2 tsp
Method
Prep the kale
Strip out the tough stems and tear the leaves into large pieces, then wash and dry them very well. Any water clinging to the leaves turns to steam and leaves them limp, so bone-dry kale is the secret to a real crisp.
Coat lightly
Toss the kale with the olive oil, salt and garlic powder, using only a thin coat of oil. Just a light film is enough, since too much oil weighs the leaves down and they go soggy rather than shattering crisp.
Load loosely
Add the leaves in a loose single layer so they do not overlap. Kale shrinks a lot as it dries, and any pieces piled on top will steam each other, so give them room to crisp on all sides.
Roast until crisp
Roast at 150°C for 8 min, checking near the end since thin leaves catch fast. They are ready when the kale is dry and crisp and shatters lightly, so lift out any browned pieces early before they turn bitter.
