Ingredients
- focaccia bread4 cups cubed
- oil2 tbsp
- dried rosemary1 tsp
- garlic powder1/2 tsp
- salt1/4 tsp
Method
Cube the focaccia
Cut the focaccia into even, bite-sized cubes, roughly two centimetres across. Keeping them the same size means they crisp at the same rate, so you do not get burnt little pieces mixed with soft, doughy big ones.
Make the herb oil
Mix the oil with the dried rosemary, garlic powder and salt in a small bowl. Combining the seasoning into the oil first spreads the flavour evenly over every cube, rather than leaving dry herbs clumped on just a few pieces.
Coat the cubes
Drizzle the herb oil over the focaccia cubes and toss gently until each one is evenly coated. A light, even coat is what turns the cut surfaces golden and crisp, while dry patches would just dry out and stay hard.
Air fry until crisp
Spread the cubes in a single layer in the basket and air fry at 180°C for 6 min, shaking once halfway, until golden and crisp outside but still a little tender within. Shaking keeps them from scorching on one side.
