Ingredients
- edamame2 cups shelled
- olive oil1 tbsp
- salt1/2 tsp
- black pepper1/4 tsp
Method
Thaw and dry
Use shelled edamame; if frozen, thaw them first, then drain and pat dry. Removing the surface water lets the beans roast and lightly crisp instead of steaming soft in their own moisture.
Season
Toss the edamame with the olive oil, salt and black pepper until evenly coated. A light film of oil helps the seasoning cling and the outsides firm up and colour in the heat.
Spread out
Spread the beans in a single layer so hot air can reach every side. Crowded beans trap steam and stay soft, while a loose layer lets each one dry out and firm up nicely.
Roast until firm
Roast at 185°C for 14 min, shaking the basket once, until the edamame are dry and lightly crisp on the outside but still tender within, then serve warm with an extra pinch of salt.
