Ingredients

  • raw plantain2 peeled and sliced thin
  • oil1 tbsp
  • turmeric1/4 tsp
  • salt1/2 tsp

Method

  1. Slice the plantain

Peel the plantain and slice it into thin, even rounds with a mandoline or sharp knife. Thin, matching slices are the trick to chips that crisp all the way through, while thick or uneven ones stay soft and chewy in the middle.

  2. Season the slices

Toss the plantain rounds with the oil, turmeric and salt until evenly coated. Just a light film of oil helps them crisp and carries the turmeric over each slice for an even golden colour.

  3. Arrange in the basket

Spread the slices in a single layer in the basket without overlapping. Any rounds that sit on top of each other will steam and turn limp, so give them room for the hot air to reach both faces.

  4. Air fry until crisp

Air fry at 180°C for 12 min, shaking the basket twice so the chips brown evenly. They are ready when golden and crisp, and if any still bend, spread them out and let them dry a little longer.
