Ingredients
- carrot400 g, cut into batons
- honey1.5 tbsp
- garlic4 cloves, minced
- olive oil1 tbsp
- black pepper1/2 tsp
- salt1/2 tsp
Method
Cut evenly
Cut the carrots into batons of the same thickness so they roast at one pace. Thin ones would scorch while chunky ones stay hard, so matching their size gives you tender, evenly cooked pieces throughout.
Make the glaze
Mix the honey, minced garlic, oil, black pepper and salt in a bowl until smooth. Whisking the honey with the oil first helps it spread in a thin, even film so every baton browns rather than a few sticky spots.
Coat the carrots
Add the carrot batons to the bowl and toss until they are glossy and well coated on all sides. An even coat means the sugars caramelise uniformly, giving you sticky edges instead of patchy, dry ends.
Preheat
Preheat the air fryer to 185°C for 3 minutes before the carrots go in. A hot basket starts the browning the moment they land, so they roast and caramelise instead of slowly drying out.
Roast
Air fry at 185°C for 16 min, shaking twice, until the carrots are tender through and the edges turn sticky and caramelised. Shaking keeps them from catching in one spot so the glaze colours evenly.
