Ingredients
- pineapple300 g
- honey1 tbsp
- chilli flakes0.5 tsp
- lemon juice1 tsp
Method
Cut
Peel the pineapple, remove the eyes, and cut it into thick wedges. Cutting them chunky rather than thin means the outside caramelises while the middle stays juicy, instead of the whole piece going soft and stringy.
Glaze
Brush the wedges all over with the honey and a squeeze of the lemon juice. The honey helps the surface caramelise into golden edges, while the lemon balances the sweetness so the fruit tastes bright, not cloying.
Arrange
Lay the wedges flat in a single layer in the basket with space between them. A crowded basket traps the fruit's juices as steam, so spacing lets that moisture escape and the cut faces catch and brown.
Air fry
Air fry at 185°C for 12 min, turning once, until the edges are caramelised and lightly charred. Scatter over the chilli flakes as they come out, since the gentle heat against the sweet fruit makes each bite pop.
