Ingredients
- brussels sprouts350 g, halved
- olive oil2 tbsp
- garlic3 cloves, minced
- black pepper1/2 tsp
- salt1/2 tsp
Method
Trim and halve
Trim the tough stem ends and cut each sprout in half through the middle. Halving opens up a flat cut face that browns and crisps, and it lets the heat reach right into the dense centre.
Season
Toss the halves with the olive oil, minced garlic, black pepper and salt. An even coat of oil helps the leaves crisp and stops the garlic burning before the sprouts are cooked through.
Face down
Arrange the sprouts cut-side down in a single layer. Resting the flat face against the basket gives direct contact with the heat, which is what turns that side deep golden and crisp.
Preheat
Preheat the air fryer to 195°C for 3 minutes. A hot basket sears the cut faces the moment they land, so the sprouts colour fast instead of drying out slowly in a cool basket.
Roast
Air fry at 195°C for 15 min, shaking the basket twice, until the outer leaves are crisp and browned and the centres are tender when pierced with a knife tip.
