Ingredients

  • potato3 large
  • oil1 tbsp
  • red chilli powder1 tsp
  • chaat masala1 tsp
  • saltto taste

Method

  1. Cut the potatoes

Peel the potatoes and cut them into thin, even fries, then rinse in cold water to wash off the extra starch. Even sizes cook at the same rate, and rinsing away starch is what stops the fries sticking together.

  2. Dry and season

Pat the fries completely dry with a towel, then toss with the oil, red chilli powder and salt. Drying them off is the single biggest thing for crispness, as any water left on turns to steam and softens them.

  3. Load the basket

Spread the fries in a single layer in the basket and do not overcrowd, cooking in batches if you need to. A crowded basket traps steam so the fries go limp, while a loose layer lets hot air crisp each one.

  4. Air fry until crisp

Air fry at 195°C for 18 min, shaking the basket every 5 min so they colour evenly. They are done when golden and crisp all over. Sprinkle the chaat masala over the hot fries and serve straight away.
