Ingredients
- broccoli1 cup, finely chopped and boiled
- cheese80 g
- besan3 tbsp
- breadcrumbs1/2 cup
- garlic1 clove, crushed
Method
Mix the batter
Mix the chopped broccoli, cheese, besan and crushed garlic in a bowl until the mixture holds together in a soft dough. The besan binds everything and soaks up moisture so the bites do not fall apart.
Shape the bites
Shape the mixture into small, flat, even bites and freeze them for 10 minutes. Chilling firms them up so they keep their shape and stay together when you coat them and set them in the hot basket.
Coat
Press each chilled bite into the breadcrumbs so both sides are fully and evenly coated. The crumb layer is what crisps into a golden shell in the air fryer and stops the soft centre from sticking.
Air fry
Spray the bites lightly with oil, then air fry at 190°C for 12 min, turning halfway so both sides colour. They are ready when the crumb coat is golden and crisp and the centre is hot right through.
