Ingredients
- Potatoes4 medium
- Oil2 tbsp
- Chaat masala1.5 tsp
- Red chili powder1 tsp
- Cornstarch1 tbsp
- Fresh coriander2 tbsp
Method
Cut even fries
Peel the potatoes and slice them into thin matchstick fries of the same thickness. Cutting them evenly means they all crisp at the same rate rather than some burning while others stay soft.
Soak and coat
Soak the fries in cold water for 20 min, then drain and pat them completely dry. Toss them with the cornstarch so each fry builds a thin, crackly shell as it cooks.
Add oil
Drizzle the oil over the cornstarch-coated fries and toss until lightly and evenly slicked. Go easy on the oil, as too much makes the fries greasy and soft rather than crisp.
First crisp stage
Spread the fries in a single layer and shake the basket every few minutes for even browning. If they do not fit in one layer, cook them in batches so each fry crisps properly.
Air-fry and dust
Air-fry at 200°C for 20 min, shaking twice, until golden and crisp. Toss the hot fries at once with the chaat masala, red chili powder and chopped coriander so the spices cling on.
