Ingredients

  • corn1 cup, boiled and coarsely mashed
  • cheese80 g
  • capsicum2 tbsp, finely chopped
  • cornflour2 tbsp
  • breadcrumbs1/2 cup

Method

  1. Mix the filling

Mix the mashed corn, cheese, chopped capsicum, cornflour and 2 tablespoons of the breadcrumbs into a firm mixture that holds together. The cornflour and crumbs soak up moisture so the balls do not fall apart.

  2. Shape and chill

Roll the mixture into small even balls and freeze them for 10 minutes. Chilling firms the dough and the cheese inside, so the balls keep their round shape and do not slump when they meet the hot basket.

  3. Coat

Roll each chilled ball in the remaining breadcrumbs until fully and evenly covered. A complete crumb coat is what turns crisp and golden in the air fryer and seals the soft cheese centre inside.

  4. Air fry

Spray the balls lightly with oil, then air fry at 190°C for 12 min, turning once so every side colours. They are ready when the crumb coat is golden brown and crisp and the cheese has melted inside.
