Ingredients
- onion2 large
- besan1/2 cup
- breadcrumbs1/2 cup
- oil2 tbsp
- red chilli powder1/2 tsp
- saltto taste
Method
Cut the onion rings
Peel the onions and cut into thick rounds, then gently push out the separate rings. Thick rings hold their shape and stay juicy inside, while thin ones turn limp and can tear once coated.
Coat with besan
Toss the rings with 1 tbsp oil, besan, red chilli powder and salt until each is lightly coated all over. The oil helps the dry besan cling and turn into a savoury crust instead of a powdery film.
Coat with breadcrumbs
Press each ring firmly into the breadcrumbs so they grip the besan layer, then drizzle over the remaining oil. Pressing well and adding oil is what gives that deep golden, crunchy shell.
Air fry
Air fry at 190°C for 14 min, turning them halfway, until golden and crisp. Lay the rings in a single layer with gaps so hot air reaches every side, or they steam soft instead of crisping.
