Ingredients
- oats1 cup
- flour1/2 cup
- butter1/3 cup
- sugar1/2 cup
- raisins1/3 cup
Method
Cream the butter
Beat the soft butter and sugar together until the mix turns pale and fluffy. Softened, not melted, butter traps tiny air pockets that keep the cookies light instead of dense and greasy.
Add the dry mix
Fold in the flour, oats and raisins with a light hand until a soft dough just comes together. Stop mixing as soon as no dry flour shows, since overworking the dough makes the baked cookies tough.
Shape the cookies
Roll even, small balls, set them on a lined tray with space between, and press each one gently flat. Equal size means they all bake in the same time, so none stay raw while others brown.
Bake
Bake at 160°C for 14 min until the edges turn golden and the tops feel set. They firm up as they cool, so lift them out while the centres are still soft to keep a chewy bite.
