Ingredients
- boneless mutton500 g, cubed
- raw papaya paste1 tbsp
- thick yogurt2 tbsp
- ginger garlic paste1 tbsp
- red chilli powder1 tsp
- garam masala1 tsp
- mustard oil1 tbsp
Method
Marinate
Mix the mutton cubes with raw papaya paste, yogurt, ginger garlic paste, red chilli powder, garam masala and mustard oil. Cover and chill for 3 hours. The papaya gently tenderises the mutton so the kebabs turn out soft, not chewy.
Skewer
Thread the mutton pieces onto skewers, leaving small gaps between each cube. The gaps let hot air circle every side, so the meat browns and cooks evenly rather than steaming where the pieces touch.
Preheat
Preheat the air fryer to 190°C for 3 min and lightly oil the basket. Starting in a hot basket sears the outside of the mutton quickly, sealing colour on the surface while the inside cooks through.
Air fry
Place the skewers in the basket and air fry at 190°C for 18 min, turning every 5 min, until the mutton is browned on the outside and cooked through with no pink inside.
