Ingredients
- prawns400 g
- breadcrumbs1 cup
- flour4 tbsp
- egg2
- salt1 tsp
- black pepper0.5 tsp
Method
Prep the prawns
Peel and devein the prawns, then pat them fully dry and season with salt and pepper. Drying the surface well is key, as wet prawns steam and stop the crumb coat from sticking and crisping.
Crumb
Coat each prawn in flour, then beaten egg, then panko breadcrumbs, pressing firmly so the coat grips. The flour helps the egg cling and the egg glues the panko on for a crust that stays put.
Air fry
Arrange the prawns in a single layer with space between them and spray lightly with oil. The oil helps the panko turn deep golden, and the gaps let hot air crisp every side evenly.
Finish
Air fry at 195°C for 12 min, turning once, until the crumb is golden and the prawns turn pink and firm. They are cooked when they turn opaque right through and curl into a C shape. Serve hot.
