Ingredients

  • fish4 fillets
  • breadcrumbs1 cup
  • egg1
  • flour3 tbsp
  • black pepper1/2 tsp
  • saltto taste

Method

  1. Set up the coating station

Put the flour in one bowl, the beaten egg in a second, and the breadcrumbs mixed with black pepper and salt in a third. A three-bowl line lets you coat cleanly, so the crumb sticks in one smooth layer instead of clumping.

  2. Coat the fillets

Pat the fillets dry, then dust each with flour, dip in the egg, and press into the breadcrumbs on both sides. Drying first and flouring gives the egg something to grip, which is what holds the crust on while it cooks.

  3. Arrange in the basket

Lay the fillets in a single layer in the basket with space between them, and spray lightly with oil. The oil helps the dry crumbs turn deep golden, and spacing lets the hot air crisp the coating all around.

  4. Air fry

Air fry at 190°C for 12 min, flipping halfway so both sides brown. The crumb turns crisp and golden, and the fish inside turns opaque and flakes easily with a fork when it is fully cooked.
