Ingredients
- prawns400 g
- desiccated coconut1/2 cup
- breadcrumbs1/2 cup
- egg1
- flour3 tbsp
- red chilli powder1/2 tsp
- saltto taste
Method
Mix the crumb coating
Combine the desiccated coconut, breadcrumbs, chilli powder and salt in a bowl. Mixing the coconut into the crumbs spreads it evenly, so every prawn gets that sweet, nutty crunch all the way around.
Set up the coating station
Dust each prawn with flour, dip it in the beaten egg, then press it into the coconut crumb mix. The flour helps the egg grip and the egg glues on the crumbs, so the coating stays put and does not slide off.
Arrange in the basket
Lay the prawns in a single layer with space between them. Room around each one lets the hot air crisp the crust evenly, while crowding traps steam and leaves the coating soft and pale.
Air fry
Air fry at 190°C for 9 min, flipping halfway through. The prawns are done when the crust is golden and the inside is pink, opaque and firm right through the centre.
