Ingredients

  • chicken350 g (minced)
  • garlic2 cloves (minced)
  • coriander2 tbsp (chopped)
  • red chilli flakes1/2 tsp
  • bread crumbs1/4 cup
  • burger bun8 (mini, for sliders)
  • cheese4 slices (halved)
  • lettuce8 small leaves
  • ketchup3 tbsp

Method

  1. Mix the slider filling

In a bowl, mix the minced chicken, garlic, coriander, chilli flakes, bread crumbs and salt until well combined. The bread crumbs soak up moisture and bind the meat, so the small patties hold together and do not fall apart.

  2. Shape mini patties

Divide the mixture into 8 small balls and flatten each into a mini patty a little wider than the buns. Press a shallow dip in the centre of each; the meat puffs as it cooks, so this keeps the patties flat and even.

  3. Air fry the patties

Arrange the patties in a single layer in the basket. Air fry at 190°C for 12 min, flipping halfway, until browned outside and cooked through to 74°C with no pink in the centre. Space between them helps every side brown.

  4. Melt the cheese and assemble

Top each patty with a half slice of cheese and return to the air fryer at 190°C for 1 min until it melts. Toast the buns in the last 2 min so they stay firm. Build with ketchup, lettuce and the cheesy patty, then serve warm.
