Ingredients
- mozzarella cheese6 sticks
- besan3 tbsp
- breadcrumbs1 cup
- chilli flakes1/2 tsp
- oil1 tsp
Method
Cut and freeze
Cut the mozzarella into thick, even sticks and freeze them for 15 minutes until firm. Firm, cold cheese holds its shape in the hot basket, so the sticks crisp on the outside before the cheese melts and leaks out.
Coat once
Roll each frozen stick in besan, then in breadcrumbs mixed with the chilli flakes, pressing gently so they stick. The besan gives the crumbs something to grip, which stops bare patches where the cheese could ooze.
Coat twice and chill
Repeat the besan and breadcrumb coating for a thicker crust, then freeze the sticks for 10 minutes. A double coat and a good chill seal the cheese in, so it stays soft inside while the shell turns crunchy.
Air fry
Spray the sticks all over with oil and air fry at 190°C for 8 min, until the crust is golden and crisp and the cheese is soft inside. A light, even oil mist is what browns the crumbs into a true deep-fried colour.
