Ingredients
- button mushrooms300 g, halved
- garlic4 cloves, minced
- olive oil1.5 tbsp
- mixed herbs1 tsp
- black pepper1/2 tsp
- salt1/2 tsp
Method
Clean and halve
Wipe the button mushrooms clean with a damp cloth and cut them in half. Avoid soaking them in water, because mushrooms soak up liquid like a sponge and that trapped water steams them soft instead of letting them roast golden.
Season
Toss the mushroom halves with the garlic, olive oil, mixed herbs, black pepper and salt until lightly coated. Toss them just before cooking so the salt does not sit and pull out too much moisture ahead of time.
Spread out
Lay the mushrooms out in a single layer with room around each piece. Crowding traps the steam they give off, so a loose, spread layer lets that moisture escape and the edges turn brown and slightly crisp.
Preheat
Preheat the air fryer for 3 minutes before the mushrooms go in. A hot basket starts browning them straight away, which drives off surface water quickly so they roast rather than stew in their own juices.
Roast
Air-fry at 185°C for 11 min, shaking the basket twice so they cook evenly. They are ready when the mushrooms are golden outside and juicy within, with any liquid cooked away so the flavour stays concentrated.
