Ingredients
- green beans3 cups trimmed
- olive oil1 tbsp
- garlic powder1/2 tsp
- salt1/2 tsp
Method
Trim and dry
Trim the tough ends off the green beans, wash them, then pat them fully dry with a cloth. Any water left on the surface turns to steam in the basket, so drying them well is what lets them roast and blister instead of going limp.
Season
Toss the beans with the olive oil, garlic powder and salt until every bean carries a light, even coat. A thin film of oil helps the seasoning cling and the surface brown, while too much would leave them greasy rather than crisp.
Spread out
Spread the beans in a single layer across the basket so each one has room around it. When they pile up the trapped steam softens them, but with space the hot air reaches all sides and the edges catch and crisp.
Roast until crisp-tender
Roast at 185°C for 12 min, shaking the basket once halfway, until the beans are crisp-tender with browned, blistered spots. Shaking moves the pieces around so no side sits pale against the base of the basket.
