Ingredients

  • Fresh fenugreek leaves1.5 cups chopped
  • Whole wheat flour1 cup
  • Gram flour (besan)1/2 cup
  • Turmeric & red chilli powder1 tsp each
  • Oil2 tbsp

Method

  1. Mix the dough

Combine the chopped methi with both flours, turmeric, chilli powder and salt. Add the oil and just enough water to bind a firm, slightly sticky dough that holds its shape. Keep it on the dry side, as a wet dough makes logs that spread and steam rather than crisp.

  2. Shape the logs

Grease your palms and squeeze portions of dough into cylinder-shaped logs about the length of your fist. Press firmly so there are no cracks or air gaps, which would make the logs break apart when you steam and then slice them.

  3. Steam first

Steam the logs over simmering water for around 15 minutes, until a toothpick pushed into the centre comes out clean. Let them cool fully before slicing, as a warm log crumbles while a cooled one cuts into neat, firm rounds.

  4. Slice and oil

Cut the cooled logs into thick coins and brush each cut face with a little oil. Steaming first keeps the inside soft and moist, and the oil on the cut sides is what lets those faces crisp up golden in the basket.

  5. Air-fry the coins

Spread the slices in a single layer and air-fry at 175C for 13 minutes, flipping once, until the edges turn deep golden and crisp. Serve them hot straight from the basket, while the outsides are snappy and the centres stay tender.
