Ingredients
- banana blossom200 g sliced
- chickpea flour60 g
- turmeric1/2 tsp
- chilli powder1 tsp
- carom seeds1/2 tsp
- water3 tbsp
- oil1 tbsp
Method
Prep the banana blossom
Slice the banana blossom thinly and soak the slices in water for 10 minutes to stop them browning, then drain them well. Draining off the soaking water is important, because wet slices would thin the batter and steam instead of crisping.
Make the batter
Mix the chickpea flour, turmeric, chilli powder, carom seeds and water into a thick, smooth paste. Keep it thick enough to cling to the slices, because a runny batter slides off and bakes patchy while a thick one sets into an even crust.
Coat the slices
Toss the banana blossom slices in the batter until each one is evenly coated, then drizzle over the oil. A light drizzle of oil is what helps the chickpea coating turn crisp and golden instead of drying out to a dull, powdery finish.
Air fry
Arrange the slices in a single layer in the basket and air-fry at 190°C for 16 min, turning them halfway, until crisp and golden brown. The single layer with a little space lets the hot air crisp every side rather than leaving soft spots.
