Ingredients

  • pizza base1 piece
  • paneer150 g
  • capsicum1 medium
  • onion1 small
  • tomato1 small
  • pizza sauce3 tbsp
  • mozzarella cheese100 g
  • chaat masala1 tsp

Method

  1. Spice the paneer

Cut the paneer into small cubes and toss with the chaat masala and a little oil. Coating the cubes in oil first helps the tangy masala cling and lets the edges brown, giving the paneer a light, savoury crust.

  2. Air fry the paneer

Spread the paneer cubes in the basket and air fry at 190°C for 6 min, shaking once, until lightly golden at the edges. Firming the paneer first stops it turning rubbery once it sits under the melting cheese.

  3. Assemble the pizza

Spread the pizza sauce evenly over the base, then scatter the capsicum, onion, tomato and air-fried paneer on top. Cover with the mozzarella. Keep the toppings light so the base can still crisp underneath.

  4. Load the base

Carefully lift the topped pizza base into the air-fryer basket, keeping it flat so the toppings do not slide off. A sheet of parchment under it makes lowering and lifting the soft base far easier.

  5. Crisp and melt

Air fry at 190°C for 8 min until the cheese melts fully and bubbles, and the base turns crisp and golden at the edges. The crisp underside tells you the base has cooked through rather than staying doughy.
