Ingredients
- Cooked mac and cheese, chilled2 cups
- Breadcrumbs1 cup
- Plain flour1/2 cup
- Eggs, beaten2
- Paprika1 tsp
Method
Chill thoroughly
Make sure your mac and cheese is firm and cold straight from the fridge. A well-chilled base is much easier to shape and holds together while cooking.
Roll into balls
Scoop heaped tablespoons and roll between your palms into compact balls. Press firmly so there are no loose cracks for the filling to escape.
Set up coating
Mix the paprika into the breadcrumbs. Arrange flour, beaten egg, and seasoned crumbs in three separate bowls for an easy coating line.
Triple coat
Roll each ball in flour, then egg, then crumbs, ensuring full coverage. Dip back into egg and crumbs once more for an extra-sturdy shell.
Chill and mist
Refrigerate the coated balls for 15 minutes, then spritz all over with oil so they brown evenly in the dry heat.
Air-fry
Air-fry at 195C for 10 minutes, turning halfway, until the shells are golden and crunchy and the centres are hot and molten. Rest briefly before biting in.
