Ingredients
- flatbread base1 medium
- cooked chicken120 g
- barbecue sauce3 tbsp
- mozzarella cheese80 g
- onion1 small
- coriander2 tbsp
Method
Use cooked chicken
Use chicken that is already cooked right through to 74°C, with no pink inside. Shred it and toss with the barbecue sauce so every piece is coated and stays juicy once it is spread onto the flatbread.
Prep the base
Spread a thin layer of barbecue sauce over the flatbread, then scatter the grated mozzarella on top. A thin sauce layer flavours the base without making it soggy, and the cheese below the toppings helps them stick.
Add chicken
Spread the saucy chicken and the sliced onion evenly over the cheese. Keeping the topping in a thin, even layer lets the flatbread crisp underneath and heats everything through at the same rate.
Air fry
Air fry at 190°C for 9 min until the cheese melts and turns golden and the chicken is hot all the way through. Finish with the coriander. Watch the edges near the end, as thin flatbread can darken quickly.
