Ingredients
- chicken thighs500 g
- soy sauce3 tbsp
- honey1 tbsp
- ginger1 tsp
- garlic2 cloves
- spring onion2 stalks
Method
Skewer
Cut the chicken thighs into even bite-sized chunks and thread them onto soaked wooden skewers, alternating with pieces of spring onion. Soaking the skewers first stops the exposed wood from scorching in the hot air.
Glaze
Whisk the soy sauce, honey, grated ginger and garlic into a smooth glaze and brush it over the skewers. The honey helps the surface caramelise and colour, while the soy carries salt and savoury depth into the meat.
Air fry
Lay the skewers in a single layer so the hot air reaches every side, and brush on more glaze about halfway through for a thick, sticky coat. Adding it in stages builds up the shine without the sugar burning too soon.
Finish
Air-fry at 195°C for 16 min, turning once, until browned and caramelised. Cut into the thickest chunk to check the juices run clear and there is no pink at the centre before serving.
