Ingredients
- potato2

- onion1
- peas1/2 cup
- cumin1 tsp
- chili powder1 tsp
Method
Make the filling
Boil and mash the potato, then mix in the cooked peas, chopped onion, cumin and chili powder until well combined. Make sure the mash is dry and cooled; a stiff filling shapes into firm logs that won't split the wrap.
Shape logs
Shape the mix into four firm logs of even size. Air fry at 180°C for 10 minutes until the outside is set and lightly browned. Firming the logs first means they stay whole when you wrap and crisp them later.
Wrap
Place a log on a warm tortilla with a little extra chopped onion alongside. Roll it up tight and tuck the ends under so nothing spills. Warming the tortilla first keeps it soft and pliable so it rolls without cracking.
Crisp the frankie
Air fry the wrapped frankie at 180°C for 6 min, seam-side down, until the flatbread is golden and crisp and the filling is hot right through. Keeping the seam down first helps it seal so the roll stays closed.
