Ingredients
- tortilla2
- potato1 medium, boiled and sliced
- capsicum1 small, sliced
- onion1 small, sliced
- chaat masala1/2 tsp
- cheese2 tbsp, grated
Method
Season the vegetables
Toss the boiled potato slices, capsicum and onion with the chaat masala and a little oil in a bowl. Coating them before cooking spreads the tangy masala evenly and the oil helps the edges brown rather than dry out.
Air fry the vegetables
Spread the vegetables in a single layer in the basket. Air fry at 190°C for 6 min, shaking once, until the edges turn light brown and the capsicum softens. This first cook drives off moisture so the filling isn't watery.
Fill the tortilla
Lay the tortilla flat and pile the air-fried vegetables in a line down the centre. Sprinkle over the cheese, then roll it up tightly into a frankie. A snug roll keeps the filling in and holds its shape while it crisps.
Crisp the frankie
Place the frankie seam-side down in the basket so it holds together. Air fry at 185°C for 7 min, turning once, until the wrap is golden and crisp and the cheese inside has melted and pulls together.
