Ingredients

  • spinach1 cup chopped
  • paneer100 g cubed
  • egg3
  • onion1/4 cup diced
  • salt1/2 tsp

Method

  1. Beat the eggs

Beat the eggs with the salt in a bowl until the yolks and whites are fully mixed. A thorough whisk works in a little air so the bake sets soft and even rather than heavy and dense.

  2. Add greens and paneer

Stir in the chopped spinach, paneer cubes and diced onion so they spread through the egg. Cutting the paneer into small cubes helps it warm through in the same time the egg needs to set.

  3. Fill the cups

Pour the mix into greased silicone cups, filling each about three quarters. Leaving space at the top stops the egg spilling over as it puffs up while it cooks in the basket.

  4. Air fry

Air fry at 175°C for 17 min until the egg is fully set and the centre feels firm with no runny liquid. A firm middle means it is cooked right through and safe to eat.
