Ingredients

  • bread4 thick slices
  • egg2
  • milk1/4 cup
  • cinnamon1 tsp
  • sugar1 tbsp
  • vanilla1/2 tsp

Method

  1. Cut

Slice each thick piece of bread into three sturdy sticks so they hold together through the dipping. Slightly stale or day-old bread works best here, as fresh soft bread soaks up too much custard and turns mushy.

  2. Make the custard

Whisk the eggs, milk, cinnamon, sugar and vanilla into a smooth batter in a wide bowl. Beating it well breaks up the egg fully, so the sticks cook to an even golden colour without streaky patches.

  3. Dip

Roll each stick in the custard for just a second or two on each side, then let the extra drip back into the bowl. A quick dip coats the outside but keeps the middle from getting soggy and falling apart.

  4. Arrange

Lay the sticks in a single layer in an oiled basket with a small gap between each one. Space lets the hot air reach every side, so they crisp and colour evenly instead of steaming where they touch.

  5. Air fry

Air fry at 180°C for 9 min, turning once halfway, until the sticks are golden and the egg coating is fully cooked and dry to the touch. Dry, not tacky, tells you the egg is set and safe to eat.
