Ingredients
- Bread slices6
- Mint mayonnaise4 tbsp
- Cucumber & tomato slices1 cup
- Cheese slices2
- Spiced potato patty, sliced1
- Butter2 tbsp
Method
Prep the spreads
Butter all six slices on one side and spread mint mayonnaise over the buttered faces. The mayo adds tang and keeps the tall stack moist while the outside crisps in the hot air.
Build the first deck
On a base slice layer cucumber, tomato and a cheese slice, then cap with a second buttered slice facing up. Keep this layer thin so the stack stays steady and does not topple in the basket.
Build the second deck
Add the sliced spiced potato patty and another cheese slice, then close with the final slice. Press the whole tower gently so it holds together, and trim the crusts if you like a neat club look.
Air-fry and cut
Secure with toothpicks, place in the basket and cook at 185°C for 13 min, flipping once, until golden and warmed through. Remove the picks and slice diagonally into four crisp triangles.
