Ingredients
- Button mushrooms300 g
- Plain flour4 tbsp
- Egg, beaten1 large
- Panko breadcrumbs1 cup
- Smoked paprika1 tsp
- Salt and pepperto taste
Method
Set up the station
Lay out three bowls: seasoned flour, beaten egg, and panko mixed with paprika, salt and pepper. A tidy line keeps the coating from turning into a paste on your fingers.
Dredge in flour
Roll each cleaned mushroom in flour and tap off the excess so the egg has something to grip. A dry surface is the secret to a crust that won't slide off.
Egg and crumb
Dip the floured caps in egg, then press them firmly into the panko until fully coated. Press a second time for an extra-thick crust if you like.
Oil and preheat
Spray the crumbed mushrooms all over with oil and heat the air fryer for three minutes. The oil mist is what turns panko deep golden instead of dusty pale.
Air-fry to crisp
Arrange in a single layer and cook at 200C for 12 minutes, turning halfway and giving another light spray. Serve straight from the basket with garlic mayo while shatteringly crisp.
