Ingredients
- Green beans300 g
- Ground almonds3/4 cup
- Egg1 large
- Parmesan1/4 cup
- Garlic powder1 tsp
- Black pepper1/2 tsp
Method
Trim and dry
Snap the tough ends off the green beans and pat them completely dry. A dry surface lets the egg grip evenly so the almond crust forms a continuous coat.
Set up coating
Beat the egg in one bowl and mix the ground almonds with parmesan, garlic powder, pepper, and salt in another. Keep one hand for wet and one for dry to avoid clumpy fingers.
Dredge each bean
Dip a bean in egg, let the excess drip, then roll it through the almond mixture, pressing gently. Coat just a few at a time so the crust stays light and even.
Lay in a layer
Arrange the coated beans in a single layer with a little gap between them and mist lightly with oil. They should lie flat so all sides toast rather than steam.
Air-fry until toasty
Air-fry the beans at 195C for 11 minutes, turning them once halfway, until the almond crust is golden and fragrant and the beans still have a tender snap inside.
