Ingredients
- Gruyere, grated120 g
- Eggs, separated3
- Plain flour30 g
- Milk150 ml
- Butter25 g
Method
Make the base
Melt the butter, stir in the flour and cook for a minute, then whisk in the milk to a thick, smooth sauce. Take it off the heat and stir in the gruyere until melted, giving the bites their rich base.
Add the yolks
Beat in the egg yolks one at a time until the mixture is glossy and smooth. Season with a pinch of salt and a little grated nutmeg, adding the yolks while warm so they blend without setting.
Whip the whites
Whisk the egg whites to soft peaks in a clean, dry bowl, as any grease stops them foaming. Fold them into the cheese base in thirds, gently, to keep in as much air as possible for a good rise.
Fill the moulds
Spoon the batter into greased silicone muffin cups, filling each about two thirds full. Smooth the tops lightly so they rise evenly, and leave headroom for the souffle to climb as it cooks.
Air-fry until risen
Cook at 180°C for 12 min without opening the basket, until puffed, golden and set in the centre. Serve them straight away, as souffles deflate quickly once they come out of the heat.
