Ingredients
- Mozzarella block, cut into batons250 g
- Breadcrumbs1 cup
- Plain flour1/2 cup
- Eggs, beaten2
- Italian herb mix1 tsp
Method
Cut and chill
Slice the mozzarella block into thick finger-length batons. Lay them on a tray and freeze for at least 30 minutes so they hold their shape and do not leak while cooking.
Set up coating
Arrange three bowls: flour, beaten egg, and breadcrumbs mixed with the herb seasoning. A neat assembly line keeps your hands and the coating clean.
Double coat
Roll each frozen baton in flour, dip into egg, then press firmly into the seasoned crumbs. Repeat the egg and crumb step a second time to build a sturdy shell that seals the cheese.
Refreeze briefly
Return the coated sticks to the freezer for 15 minutes. A cold start is the secret to a crisp crust without the cheese escaping.
Mist and arrange
Spritz the sticks lightly with oil on all sides and lay them in the basket with space between each one so hot air can circulate.
Air-fry
Air-fry at 200C for 7 minutes, gently turning halfway, until the crust is deep golden and crisp. Rest for 1 minute before serving so the molten centre settles.
