Ingredients
- Dried chickpeas, soaked overnight1 cup
- Fresh parsley and cilantro1 cup packed
- Garlic cloves3
- Ground cumin and coriander1.5 tsp each
- Chickpea flour2 tbsp
- Olive oil sprayas needed
Method
Pulse the base
Drain the soaked raw chickpeas well and pat them dry, then pulse with the herbs, garlic and spices in a food processor. Stop while it is coarse and grainy, not smooth, so the falafel stays light and crumbly inside.
Bind and rest
Stir in the chickpea flour and a good pinch of salt, then squeeze a handful in your palm to check it holds. Chill for 15 minutes so the flour soaks up moisture and the balls keep their shape in the basket.
Shape the bites
Roll the mix into small walnut-sized balls and gently press each into a thick disc. Flattening them helps the middle cook through before the outside over-browns, and misting with olive oil spray crisps the surface evenly.
Air-fry until crisp
Arrange the discs in a single layer with space between them and cook at 190C for 14 min, flipping once at the halfway mark. They are ready when deeply golden and crackly on the outside and firm enough to lift cleanly.
