Ingredients

  • Boiled mixed veggies2 cups
  • Boiled mashed potato1 cup
  • Garam masala and salt1.5 tsp
  • Ginger-green chilli paste1 tsp
  • Bread crumbs1.5 cups

Method

  1. Mash the base

Mash the boiled mixed veggies and potato together until mostly smooth, leaving a few small chunks for bite. Drain off any moisture so the mix is dry enough to shape, or wet cutlets fall apart and steam instead of crisping.

  2. Season well

Stir in the garam masala, salt and the ginger-green chilli paste. Taste and adjust so the flavour stays mild and kid-friendly but still warm and aromatic, since the spice mellows a little once cooked.

  3. Form cutlets

Divide the mix and press each portion into a flat oval patty about a centimetre thick. Smooth the edges firmly so they do not crumble, because ragged edges are the first place a cutlet cracks in the basket.

  4. Crumb coat

Dip each patty in a thin corn flour slurry, then press both sides into the bread crumbs. Coat them thoroughly and evenly, since a full crumb layer is what fries up into a crunchy, golden shell.

  5. Air-fry till crisp

Spray the cutlets with oil and lay them in a single layer. Air-fry at 190°C for 13 min, flipping once, until golden and crisp on both faces and hot right through the centre.
