Ingredients

  • Frozen french fries300 g
  • Cooking oil spray1 tsp
  • Saltto taste
  • Red chilli powder1/2 tsp
  • Chaat masala1/2 tsp

Method

  1. Skip the thaw

Take the fries straight from the freezer without defrosting, as thawing makes them soggy and limp. Tip the frozen fries directly into a bowl so any ice crystals can be brushed off before cooking.

  2. Light oil coating

Mist the fries with a teaspoon of oil spray and toss so each piece carries a thin sheen. This little fat helps the surface blister and crisp instead of drying out into cardboard.

  3. Preheat the basket

Run the air fryer empty for 3 minutes so the basket is hot when the fries go in. A hot start sears the outside quickly and locks in the fluffy centre.

  4. Season after, not before

Keep salt and spices aside until the fries are cooked, because salt draws out moisture and softens them mid-cook. Have the chaat masala and chilli powder ready in a wide bowl for tossing.

  5. Air-fry to golden

Spread the fries in a single layer and air-fry at 200C for 16 minutes, shaking the basket twice so every side browns evenly. Toss the hot fries with salt, chilli powder and chaat masala the moment they come out.
