Ingredients
- Potatoes3 medium
- Oil1 tbsp
- Chaat masala1 tsp
- Red chilli powder1/2 tsp
- Saltto taste
Method
Cut and soak
Peel the potatoes and cut them into even matchsticks about 1 cm thick. Soak them in cold water for 20 minutes to draw out the surface starch, which is the single biggest reason air-fried fries turn out crisp rather than soft.
Dry thoroughly
Drain the fries and pat them completely dry with a clean kitchen towel. Any water left clinging to them turns to steam in the basket, which softens the surface instead of letting it crisp and brown into a golden shell.
Coat lightly
Toss the dried fries with just the 1 tablespoon of oil so each piece carries a thin, even sheen. Keep the chaat masala aside for the finish, because chaat masala scorches at high heat and would taste bitter if added now.
Air-fry till golden
Spread the fries in a single layer and air-fry at 190°C for 18 min, shaking the basket twice so they brown evenly on all sides. Toss the hot fries with chaat masala, chilli powder and salt straight away so the spices stick.
