Ingredients
- fish4 steaks
- olive oil2 tbsp
- garlic3 cloves
- dried oregano1 tsp
- black pepper1/2 tsp
- lemon1
- saltto taste
Method
Make the herb rub
Mix the olive oil, minced garlic, oregano, black pepper and salt into a loose paste. The oil carries the flavour right onto the fish and helps it brown, while the garlic and herbs season it deeply.
Rub the fish
Pat the fish steaks dry and rub the herb paste over both sides. Rest for 10 minutes so the seasoning settles in, and drying the fish first means it colours rather than steams in the basket.
Arrange in the basket
Place the steaks in a single layer with room between each piece. Spacing them out lets the hot air flow around every side, so they cook evenly and firm up instead of stewing where they touch.
Air fry
Air fry at 190°C for 10 min, flipping halfway. The fish is ready when it turns opaque and flakes easily with a fork at the thickest point. Squeeze lemon over the top just before serving.
