Ingredients

  • Whole-wheat + maida mix2 cups
  • Ghee (moyan)4 tbsp
  • Kasuri methi1.5 tbsp
  • Cumin & crushed coriander1.5 tsp
  • Red chilli + turmeric1 tsp
  • Salt3/4 tsp

Method

  1. Season the flour

Stir the flour mix with kasuri methi, cumin, crushed coriander, chilli, turmeric and salt. Rub in the ghee until the mixture clumps when you press a fistful, the sign there is enough fat for a flaky bite.

  2. Make a stiff dough

Knead with just enough cold water to bring it into a tight, non-sticky dough. Keep it firm so the mathri stays crisp, and rest it covered for twenty minutes to let the spices bloom into the dough.

  3. Roll the rounds

Divide the dough into balls and flatten each into a thick round about two inches wide. Prick them all over with a fork, which stops the dough puffing up and keeps the mathri flat and evenly crisp.

  4. Brush and arrange

Lay the mathris in a single layer in the basket and brush a little ghee over each top. Leave a gap between them so hot air can circulate around every side and colour them evenly all over.

  5. Air-fry golden

Air-fry at 175°C for 17 min, flipping once midway for an even bake on both faces. They will feel a touch soft when hot, so let them cool, where they crisp further into a satisfying snap.
