Ingredients
- Eggs (for boiling)4
- Boiled mashed potato2 cups
- Ginger-garlic & chilli1 tsp
- Garam masala & saltto taste
- Egg, beaten (for coating)1
- Breadcrumbs1 cup
Method
Soft-boil the eggs
Boil four eggs for six minutes for a just-set yolk, then plunge into iced water. The cold shock stops cooking and makes the shells peel away cleanly.
Season the potato
Mix the mashed potato with ginger-garlic-chilli paste, garam masala and salt until firm and pliable. If it feels sticky, add a spoon of cornflour so it holds its shape around the egg.
Wrap each egg
Flatten a portion of potato in your palm, set a peeled egg in the centre and mould the potato around it into a smooth ball. Seal any cracks so the yolk stays sealed inside.
Crumb the shell
Roll each ball in beaten egg, then coat thickly in breadcrumbs, pressing so they stick everywhere. A complete crumb layer is what gives the crunchy outer shell.
Air-fry until golden
Spritz the balls with oil and cook at 190C for 14 minutes, turning halfway, until evenly browned and crisp. Rest a couple of minutes before halving to reveal the soft yolk.
