Ingredients
- Boiled eggs, halved4
- Spiced mashed potato1.5 cups
- Ginger-chilli paste1 tbsp
- Bengali garam masala1 tsp
- Beaten egg1
- Breadcrumbs1 cup
Method
Spice the potato
Saute the ginger-chilli paste and a little chopped onion, then mix into the mashed potato with garam masala, salt and sugar. The casing should be well seasoned because it carries most of the flavour.
Wrap the eggs
Take a portion of potato and flatten it on your palm, then place an egg half cut-side in and mould the potato fully around it. Shape into the classic teardrop devil form.
Rest the chops
Chill the wrapped eggs for ten minutes so the potato firms up. This makes the crumbing far easier and prevents cracking.
Crumb generously
Roll each devil in beaten egg, then coat thickly in breadcrumbs, repeating for a sturdy shell. Press the crumbs in so they stay put while cooking.
Air-fry the devils
Spray well with oil and place the chops in a single layer in the basket. Air-fry at 190C for 15 minutes, turning gently halfway, until the shell is deep golden and crisp.
